
Dilrukshi Thavarajah
Dil is an Associate Professor of Pulse Quality and Nutrition at Clemson University with ~12 years of experience in micronutrient biofortification of lentil, field pea, and chickpea. Her expertise includes pulse crop physiology with respect to macronutrient biofortification (prebiotic carbohydrates, and protein), micronutrient biotransformation (minerals: Se, Fe, Zn, P, and Se; carotenoids; folate; phenolic acids; and phytate), nutrient bioavailability (Cell and animal models), and functional food product development. She has extensive knowledge of field crop production, food system development and phenotyping nutritional quality using a range of analytical techniques (ICP-OES, ICP-MS, HPLC, GC-MS, and enzyme assays), X-ray absorption spectroscopy, X-ray imaging techniques, and food product development. Dil is a Faculty Research Fellow of Clemson University School of Health Research, the Vice-President for North American Pulse Improvement Society, the American Representative for International Steering Committee of International Food Legume Research, Editorial board member for the Journal of Food Composition and Analysis, and Honorary visiting lecturer, University of Peradeniya, Sri Lanka.
