
Filiz Koksel
Dr. Filiz Koksel is an Assistant Professor in Food Processing within the Department of Food and Human Nutritional Sciences at the University of Manitoba, Canada. With her background in food engineering, she specializes in processing of foods and food ingredients, especially those from cereals and pulses. At the University of Manitoba, she teaches Food Processing and Food Engineering courses, focusing on monitoring and manipulating process parameters in order to produce high quality foods that are safe, nutritious and palatable. Her research expertise includes improvement and utilization of novel techniques (e.g., low-intensity ultrasound, X-ray microtomography) to understand the mechanical properties of foods and food microstructure, heat and mass transfer operations during food processes such as extrusion, as well as physical and techno-functional properties of plant-based food ingredients.
